Director’s note Dear Reader,
I am proud to announce the publication of the new issue of the Shimadzu Journal,
which is focused on the topic of Food Development. In recent years, the interest
in food safety and food development has increased significantly due to the
effects of diet on health in both positive and negative ways. In particular, the
development of functional foods has increased. In support of this changing
dynamic, Shimadzu has applied resources to the development of applications
and has conducted joint research with leading researchers around the world.
